You will be leading and empowering our established team to push our food offering to the next level. Supporting our Head Chef you will use your experience and passion to drive excellence, creativity and development. Our ideal candidate demonstrates the ability to consistently deliver a quality product, knows the importance of working in a clean, tidy and organised manner, and has a natural tendency to do everything to the best of their ability. </p><p>Responsibilities and Duties: </p><ul><li>Assisting the head chef with the day-to-day running of the kitchen </li><li>Designing menus together with the head chef </li><li>Preparing, cooking and presenting food in accordance with agreed restaurant standards </li><li>Supervising the work of the kitchen brigade </li><li>Ensuring dishes are prepared and presented in accordance with recipes </li><li>Deputising for the head chef when absent </li><li>Ordering food provisions, performing stock control and overseeing inventory management </li><li>Ensuring that all kitchen operations are in compliance with food hygiene (HACCP) and safety regulations </li><li>Organizing kitchen teamwork shifts and rotas </li><li>Coordinating team training and development </li><li>Managing and resolving any issues that may arise quickly and efficiently </li></ul><p>We work straight shifts covering breakfast, lunch, afternoon tea and dinner, as well as a small function trade. </p><p>Qualifications: </p><ul><li>minimum of 2 years’ experience in a quality hotel (4-star or higher) or restaurant </li><li>Experienced in all areas of food preparation including butchery, fish prep, sauce, and patisserie </li><li>Knowledge of HCAAP, food hygiene and safety regulations </li></ul><p>Key Skills : </p><ul><li>Ability to forecast, plan and prioritise </li><li>Leadership </li><li>Communication </li><li>Works well under pressure </li><li>Organised </li></ul><p>As a family-owned, independent Cornish business, we value every member of our talented team.
